Ingredients
  

  • 1 cup 2 sticks unsalted butter
  • 2 cups mashed sweet potatoes about 3 medium
  • 1 cup brown sugar
  • 1 cup granulated sugar
  • 1/2 cup evaporated milk
  • 1/2 cup heavy cream
  • 4 large eggs
  • 2 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp ginger
  • 1/2 tsp salt
  • Juice of 1/2 orange about 2 tbsp
  • Juice of 1/2 lemon about 1 tbsp
  • 2 unbaked 9" pie crusts

Instructions
 

  • Bake sweet potatoes at 400°F for 45 mins, then peel & mash.
  • Brown butter: Melt butter in a pan, cook until golden & nutty.
  • Mix filling: Combine mashed potatoes, sugars, milk, cream, eggs, spices, salt, juices & cooled brown butter.
  • Fill crusts and bake at 350°F for 45-55 mins
