Browned Butter Sweet Potato Pie (Recipe For 2 Pies)
Ingredients
- 1 cup 2 sticks unsalted butter
- 2 cups mashed sweet potatoes about 3 medium
- 1 cup brown sugar
- 1 cup granulated sugar
- 1/2 cup evaporated milk
- 1/2 cup heavy cream
- 4 large eggs
- 2 tsp vanilla extract
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp ginger
- 1/2 tsp salt
- Juice of 1/2 orange about 2 tbsp
- Juice of 1/2 lemon about 1 tbsp
- 2 unbaked 9″ pie crusts
Instructions
- Bake sweet potatoes at 400°F for 45 mins, then peel & mash.
- Brown butter: Melt butter in a pan, cook until golden & nutty.
- Mix filling: Combine mashed potatoes, sugars, milk, cream, eggs, spices, salt, juices & cooled brown butter.
